Ingredients
4 large jalapeños, halved and seeded
2 Tbs vegetable oil
1 cup sharp cheddar cheese, grated
1 cup Monterey Jack cheese, grated
1/3 cup mayonnaise
2 Tbs whipped cream cheese, room temperature
1 Tbs pimiento pieces, finely chopped
2 tsp fresh parsley
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper
Directions
- Rub the jalapeños with oil (inside the cavity and on the skin).
- Place on a baking sheet.
- In a large bowl, add the remaining ingredients.
- Stir to combine.
- Spoon pimiento cheese into each pepper.
- Heat grill to medium.
- Place jalapeños on the grill.
- Cook for 10 minutes or until filling is melted and grill marks appear on the jalapeños.
